Kale and Arugula Pesto

  • 2 cloves garlic or 4 garlic scapes

  • 1 packed cup of arugula

  • 1 packed cup of kale

  • 1/2 cup olive oil

  • 1/4 cup pine nuts or walnuts

  • 1/2 cup of grated or shaved parmesan cheese

  • salt and pepper to taste

  • lemon juice

In a food processor, chop garlic or scapes. Add arugula and kale and blend in the food processor.

While the food processor is running slowly add olive oil. Add in nuts and cheese and blend until well combined. Taste and adjust flavors with salt, pepper and lemon juice.

Enjoy with pasta, on a sandwich, or as a topping for a meal with grains and protein.
