Roasted Delicata Squash with Parmesan and Dill

  • 2 Delicata squash, washed, halved lengthwise and seeds removed

  • 2 Tablespoons olive oil

  • 2 medium garlic cloves, minced

  • Kosher salt and ground black pepper to taste

  • 2 Tablespoons fresh dill, finely chopped

  • Parmesan cheese to taste

Preheat the oven to 400 degrees. Slice the prepared squash into half circles, about 1/2 inch thick. In a bowl, toss the squash with olive oil, garlic, salt and pepper. Spread the coated squash slices in a single layer on the baking sheet and sprinkle with fresh dill. Then finely grate parmesan cheese over the squash to your preference. Bake for about 25 minutes until the squash slices are soft when tested with a fork. Add more parmesan and dill to your taste before serving.
